
✅️ Italian Slow Cooker Chicken & Mushrooms with Sun-Dried Tomatoes
π Ingredients:
◾️ 1 pound chicken breasts
◾️ 8 ounces sliced mushrooms
◾️ 1 onion, chopped
◾️ 1/2 cup sun-dried tomatoes
◾️ 3 cloves garlic, minced
◾️ 1 can (14.5 oz) diced tomatoes
◾️ 1/2 cup chicken broth
◾️ 2 tablespoons vinegar
◾️ 1 teaspoon dried oregano
◾️ 1 teaspoon dried basil
◾️ 1 teaspoon salt
◾️ 1/2 teaspoon black pepper
◾️ 1/4 teaspoon red pepper flakes (optional)
◾️ Fresh parsley, chopped (for garnish)
◾️ Grated Parmesan cheese (for garnish)
π Directions:
➡️1. Layer mushrooms, onion, and sun-dried tomatoes at the bottom of your slow cooker.
➡️2. Place chicken breasts on top of the vegetable layer.
➡️3. In a bowl, combine garlic, diced tomatoes, chicken broth, vinegar, oregano, basil, salt, black pepper, and red pepper flakes (if using).
➡️4. Pour this tomato mixture evenly over the chicken.
➡️5. Cover and cook:
◾️ On LOW for 6–7 hours
◾️ On HIGH for 3–4 hours
➡️6. Before serving, sprinkle with fresh parsley and grated Parmesan cheese.
