Carrot Walnut Cake Recipe: Moist, Flavorful, and Perfectly Spiced

Ingredients:

For the Cake:

  • 2 cups all-purpose flour

  • 1 teaspoon vanilla extract
  • 1–2 tablespoons milk (for desired consistency)

Instructions:

Step 1: Prepare the Batter

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together the flourbaking powderbaking sodacinnamonnutmegginger, and salt. Set aside.
  3. In a large bowl, whisk together the granulated sugarbrown sugareggsvegetable oilapplesauce, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 2: Bake the Cake

  1. Divide the batter evenly between the prepared cake pans.
  2. Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 3: Prepare the Cream Cheese Frosting

  1. In a large mixing bowl, beat the cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  3. Mix in the vanilla extract and enough milk to reach your desired frosting consistency.

Step 4: Assemble the Cake

  1. Place one cake layer on a serving plate and spread a generous layer of frosting on top.
  2. Add the second cake layer and frost the top and sides of the cake.
  3. Decorate with additional chopped walnuts or grated carrots if desired.
