Ingredients

1 teaspoon salt
1 1/3 cups (320 ml) warm water
4 3/4 cups (570 g) plain flour

Step 1: Activate the Yeast
In a small bowl, combine the warm water and dry yeast. Stir and let it sit for 5-10 minutes, or until the yeast becomes frothy.
Step 2: Mix the Dough
In a large mixing bowl, combine the flour and salt.
Create a well in the center and pour in the olive oil and the activated yeast mixture.
Mix with a wooden spoon or your hands until a rough dough begins to form.
Step 3: Knead the Dough
Transfer the dough to a floured surface and knead for 8-10 minutes, until the dough becomes smooth and elastic.
If the dough is too sticky, add a little more flour, one tablespoon at a time.
Step 4: First Rise
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Step 5: Shape the Dough
Punch down the dough to release any air bubbles.
Shape the dough into a loaf or divide it into smaller portions for rolls.
Place the shaped dough onto a baking tray or into a loaf pan.
Step 6: Second Rise
Cover the dough again and let it rise for another 30 minutes, allowing the dough to rise further.
