✅️2.5–3 lbs lamb shoulder (boneless or bone-in)
✅️2 tbsp olive oil
✅️Salt & freshly ground black pepper
✅️3 large onions, thinly sliced
✅️4 garlic cloves, minced
✅️1 cup tomato passata
✅️1/2 cup dry white wine
✅️1/2 cup beef or lamb stock
✅️1 tbsp Worcestershire sauce
✅️1 tsp dried thyme
✅️1 tsp dried rosemary
✅️1 bay leaf
✅️Fresh parsley, for garnish
▶️ Instructions:
↪️1. Sear & Season: Pat the lamb dry, season with salt and pepper. Brown it in olive oil over medium-high heat, 4–5 minutes per side. Transfer to the slow cooker.
↪️2. Flavor Base: In the same pan, cook the onions and garlic until golden and soft (6–8 min). Add to the slow cooker.
↪️3. Slow Cook: Pour in passata, wine, stock, Worcestershire sauce, and herbs. Stir gently. Cover and cook on LOW for 8 hrs or HIGH for 4–5 hrs.
↪️4. Finish & Serve: Discard bay leaf, adjust seasoning, and garnish with fresh parsley. Serve hot with mashed potatoes, creamy polenta, or crusty bread!
