
🔹Slow Cooker Chicken Stew 🔹
➡️ Ingredients:
◾️ 3 carrots, sliced
◾️ 3 celery stalks, sliced
◾️ 1 medium onion, diced
◾️ 3–4 medium potatoes, cut into chunks
◾️ 2 cups cooked shredded chicken (or 2 raw chicken breasts)
◾️ 1 cup frozen peas
◾️ 1 cup frozen corn
◾️ 4 cups chicken broth
◾️ 2 cloves garlic, minced
◾️ 1 tsp dried thyme
◾️ 1 tsp dried parsley
◾️ 1/2 tsp black pepper
◾️ 1/2 tsp salt (adjust to taste)
◾️ 1 tbsp olive oil (optional)
◾️ 1 tbsp cornstarch (optional, for thickening)
➡️ Instructions:
🔹 Prep the Veggies:
◾️ Peel and slice the carrots.
◾️ Dice the onion and celery.
◾️ Wash and chop potatoes into chunks (leave skins on if desired).
🔹 Layer in Slow Cooker:
◾️ Add carrots, celery, onion, and potatoes to the bottom.
◾️ Place raw chicken breasts on top (if using raw; if cooked, add later).
🔹 Add Seasoning & Broth:
◾️ Sprinkle in garlic, thyme, parsley, salt, and pepper.
◾️ Pour chicken broth over everything.
🔹 Cook:
◾️ Cover and cook on Low for 6–7 hours or High for 3–4 hours.
◾️ If using raw chicken, remove and shred it after cooking, then return it to the pot.
🔹 Add Final Ingredients:
◾️ Add peas and corn in the last 30 minutes of cooking.
◾️ (Optional) For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes.
🔹 Serve:
◾️ Taste and adjust seasoning.
◾️ Serve warm, garnished with fresh parsley if desired.
