π Ingredients:
▶️2 lbs (900g) beef chuck or stewing beef, cut into chunks
▶️2 tablespoons vegetable oil
▶️1 onion, finely chopped
▶️4 garlic cloves, minced
▶️1-inch piece of fresh ginger, grated
▶️1 ½ tablespoons curry powder
▶️1 teaspoon turmeric powder
▶️1 can (13.5 oz / 400ml) coconut milk
▶️1 cup beef stock
▶️2 tablespoons tomato paste
▶️1 tablespoon fish sauce (or soy sauce as a substitute)
▶️1 teaspoon sugar
▶️2 cups chopped vegetables (e.g., carrots, potatoes, or bell peppers)
▶️Salt and pepper to taste
▶️Fresh cilantro, for garnish
▶️Steamed rice, for serving

◾️1. Brown the Beef:
In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Add the beef chunks in batches and sear until browned on all sides. Transfer to a plate and set aside.

In the same pot, add a little more oil if needed, then sautΓ© the onion, garlic, and ginger for 2–3 minutes until soft and fragrant.

Stir in the curry powder and turmeric. Cook for 1 minute to toast the spices and deepen their flavor.

Pour in the coconut milk and beef stock. Stir in the tomato paste, fish sauce, and sugar. Mix well and bring to a gentle simmer.

Return the beef to the pot. Cover and simmer on low heat for 1.5 to 2 hours, stirring occasionally, until the beef is tender.
