◾ Lamb & Meat:
4 lamb shanks
2 tbsp olive oil
◾ Vegetables:
2 onions, finely chopped
3 cloves garlic, minced
1 carrot, diced
2 celery stalks, diced
◾ Broth & Sauce:
1 cup beef broth (plus extra if needed)
2 cups beef broth
1 can (14 oz) diced tomatoes
2 tbsp tomato paste
◾ Herbs & Seasoning:
1 tsp fresh thyme leaves
1 tsp fresh rosemary, chopped
Salt and pepper to taste
๐Instructions
๐น Preheat Oven:
▶️ Preheat oven to 325°F (163°C).
๐น Brown the Lamb Shanks:
▶️ Season lamb shanks with salt and pepper.
▶️ Heat olive oil in a large oven-proof pot over medium-high heat.
▶️ Brown lamb shanks on all sides.
▶️ Remove and set aside.
๐น Sautรฉ Vegetables:
▶️ In the same pot, add onions, garlic, carrot, and celery.
▶️ Sautรฉ until softened.
๐น Deglaze & Prepare Sauce:
▶️ Add 1 cup beef broth to deglaze, scraping browned bits.
▶️ Stir in remaining 2 cups broth, diced tomatoes, tomato paste, thyme, and rosemary.
▶️ Bring to a simmer.
๐น Braise in Oven:
✅ Return lamb shanks to the pot.
✅ Cover and transfer to the oven.
✅ Braise for 2–2.5 hours until meat is tender and falls off the bone.
