Step 2: Cook the Ground Beef and Onions
Heat a large skillet over medium-high heat. Add the chopped yellow onion and cook until it becomes translucent, about 5 minutes.
Add the ground beef to the skillet with the onions. Cook until the beef is browned and fully cooked, breaking it apart with a spatula as it cooks. Drain any excess fat.
Season the beef with salt, pepper, onion powder, and garlic powder to taste. If using, stir in the can of Rotel for an extra kick of flavor.
Step 3: Assemble the Casserole
Spread the cooked beef mixture evenly in the bottom of a 9×13-inch baking dish.
Sprinkle 1 cup of shredded triple cheddar cheese over the beef mixture.
Arrange the tater tots in a single layer over the cheese and beef mixture, covering the entire surface.
Step 4: Bake the Casserole
Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
Step 5: Prepare the Sauce
In a small bowl, combine the mayo and thousand island dressing. Mix well to create the “special sauce.”
Step 6: Finish and Serve
Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
