Ingredients

1 ripe banana
1-2 tbsp maple syrup
1 egg (or egg substitute)
120 g (4.2 oz) rolled oats
Cinnamon to taste
50 g (1.7 oz) unsweetened chocolate, chopped
Cherries to decorate cookies
Instructions
Preheat oven:
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
Mashed banana:
In a large bowl, mash the ripe banana until smooth.
Combine wet ingredients:
Add the maple syrup and egg (or egg substitute) to the mashed banana. Mix well until combined.
Add Dry Ingredients:
Stir in oats and cinnamon. Mix until well combined.
Add Chocolate:
Stir in chopped unsweetened chocolate.
Form Cookies:
Using a spoon, scoop out pieces of dough and place on the prepared baking sheet. Flatten each cookie slightly with the back of the spoon. Decorate each cookie with cherries.
Bake:
Bake in the preheated oven for 12 to 15 minutes or until golden brown around the edges.
Cool and Serve:
Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
