Ingredients:

- 5 zucchini (courgettes)
- 3 eggs
- Salt and pepper, to taste

- 120g wheat flour (approximately 1 cup)
- 80g scamorza cheese or another cheese of your choice (approximately 2/3 cup, shredded)
- 1 small zucchini (courgette), thinly sliced
- Olive oil, for drizzling
- Oregano, to taste

- Prepare the Zucchini:
- Grate the 5 zucchini and place them in a bowl. Add a pinch of salt and let them drain for 10 minutes to remove excess moisture. After draining, squeeze out any remaining water.
- Mix the Batter:

- In a separate bowl, beat the 3 eggs. Season with salt and pepper to taste.
- Add the drained zucchini to the eggs and mix well.
- Gradually add 120g of wheat flour to the mixture, stirring until well combined.

- Preheat your oven to 360°F (180°C).
- Spread the zucchini mixture evenly in a baking dish.
- Bake for 15 minutes.

- Remove the dish from the oven and sprinkle 80g of shredded scamorza cheese (or another cheese) evenly over the top.
- Arrange thin slices of the small zucchini on top of the cheese.
