Ingredients:
For the Dough:
2 cups all-purpose flour (plus extra for rolling)
1 tsp salt
1/2 tsp sugar
1/2 cup warm water
2 tbsp olive oil (or melted butter)
1 tsp active dry yeast
For the Filling:
2 large potatoes, peeled and thinly sliced
1 cup shredded mozzarella cheese (or a cheese blend of your choice)
1/4 cup grated Parmesan cheese
2 tbsp fresh herbs (such as rosemary, thyme, or parsley), chopped
2 tbsp olive oil
Salt and pepper, to taste
1/2 tsp garlic powder (optional, for extra flavor)
Instructions:
1. Prepare the Dough:
In a bowl, combine the flour, salt, and sugar. In a small bowl, dissolve the yeast in the warm water and let it sit for 5 minutes, or until it becomes frothy.
Add the yeast mixture and olive oil to the flour mixture and stir until a dough forms. Knead the dough on a lightly floured surface for 5-7 minutes, until smooth and elastic.
Cover the dough with a clean kitchen towel and let it rise for 1-1.5 hours, or until it doubles in size.
2. Prepare the Potato Filling:
While the dough is rising, prepare the potato filling. Slice the potatoes into thin rounds. You can either boil or steam the slices for about 5-7 minutes until they are tender but not fully cooked, or you can layer them raw if you prefer a crisper texture. Season the potatoes with salt, pepper, and garlic powder (if using).
In a separate bowl, combine the shredded mozzarella, Parmesan cheese, and chopped herbs. Set aside.
3. Roll Out the Dough:
Once the dough has risen, punch it down and divide it into 2 equal portions (for two flatbreads). Roll out one portion on a floured surface into a thin circle, about 10 inches in diameter.
