Ingredients ๐
Dry Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients:
- 1/2 cup unsalted butter, melted and slightly cooled
- 1/2 cup whole milk (or buttermilk for extra tang)
- 1/2 cup plain yogurt (or sour cream)
- 2 large eggs
- 1 teaspoon vanilla extract
The Berries:
- 1/2 cup fresh or frozen blueberries ๐ซ
- 1/2 cup diced fresh strawberries ๐
- 1/2 cup fresh or frozen raspberries ๐
- 1 tablespoon all-purpose flour (to coat the berries and prevent sinking)
Instructions ๐ง
Step 1: Preheat the Oven
Preheat your oven to 375ยฐF (190ยฐC). Line a 12-cup muffin tin with paper liners or grease the cups with non-stick spray.
Step 2: Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
Step 3: Prepare the Wet Ingredients
In another bowl, whisk together the melted butter, milk, yogurt, eggs, and vanilla extract until smooth and well combined.
Step 4: Combine Wet and Dry Ingredients
Gradually add the wet ingredients to the dry ingredients. Gently fold the mixture until just combined โ donโt overmix; a few lumps are okay!
Step 5: Fold in the Berries
In a small bowl, toss the berries with the tablespoon of flour to coat them. This helps keep them evenly distributed and prevents them from sinking to the bottom. Gently fold the berries into the batter.
Step 6: Fill the Muffin Cups
Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
Step 7: Bake
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden.
Step 8: Cool and Enjoy
Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
