Dried Tomato Pesto – Sicilian Recipe
Ingredients:
– 100g dried tomatoes (not in oil)
– 50g pine nuts
– 2 cloves of garlic
– 50g grated Parmesan cheese
– 50g grated Pecorino cheese
– 10 fresh basil leaves
– 120ml extra virgin olive oil
– Salt and pepper to taste
Preparation:
1. Soak the dried tomatoes: Place the dried tomatoes in a bowl and cover them with boiling water. Let them soak for about 15 minutes until they become soft. Drain the tomatoes and pat them dry with a paper towel.
