▪️ For the crust:
🔸 200g finely crushed graham crackers or speculoos
🔸 100g unsalted butter, melted
🔸 50g sugar
▪️ For the cheesecake:
🔸 600g cream cheese, at room temperature
🔸 150g sugar
🔸 3 eggs (added one at a time)
🔸 2 tbsp flour
🔸 1 tsp vanilla extract
🔸 250ml heavy cream
▪️ For the crème brûlée layer:
🔸 250ml single cream
🔸 100g sugar
🔸 3 egg yolks
🔸 1 tsp vanilla extract
🔸 1 pinch salt
🔸 Extra sugar to caramelize the surface

1. Make the Crust:
Preheat: Preheat your oven to 350°F (175°C).
Mix the Crust: In a bowl, mix the crushed cookies, melted butter, and sugar until smooth. Make the Crust: Press the mixture into the bottom of a springform pan to form an even crust. Use the back of a glass to press down firmly.
Bake: Bake for 10 minutes, then let cool.
2. Make the Cheesecake:
Cream the Cheese: In a large bowl, beat the cream cheese until smooth and creamy. Add the sugar and mix well.
Add the Eggs: Beat in the eggs one at a time, beating well after each addition to ensure they are fully combined.
Add the Remaining Ingredients: Beat in the flour, vanilla extract, and heavy cream. Mix until smooth.
