For the Chicken:
4 boneless, skinless chicken breasts (about 1.5 lbs)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 egg, beaten
Olive oil spray
For the Potato Bake:
4 medium potatoes, peeled and cubed
1 onion, chopped
2 cloves garlic, minced
1/2 cup chicken broth
1/4 cup butter
1 cup shredded cheddar cheese
Salt and pepper to taste
Instructions:

Prepare the Chicken:
In a shallow dish, combine breadcrumbs, Parmesan cheese, parsley, oregano, garlic powder, salt, and pepper.
In a separate shallow dish, whisk the egg.
Dip each chicken breast in the egg, then dredge in the breadcrumb mixture, ensuring it’s evenly coated.
