Why Make Homemade Cheese?
Making cheese at home might sound complicated, but it’s easier than you think. With just a few ingredients and some patience, you can create fresh, preservative-free cheese tailored to your taste. This recipe is perfect for beginners and doesn’t require any fancy equipment.
Ingredients:
1 liter (4 cups) whole milk
2 tablespoons white vinegar or lemon juice
½ teaspoon salt (adjust to taste)
1 teaspoon black pepper (crushed)
1 teaspoon dried herbs (oregano, thyme, or rosemary)
1 tablespoon olive oil (optional, for extra richness)
Instructions:
Step 1: Heat the Milk
Pour the whole milk into a saucepan and heat it over medium heat until it reaches a gentle simmer. Stir occasionally to prevent scorching.
Step 2: Add the Acid
Once the milk is hot, add the vinegar or lemon juice and stir gently. You will notice the milk curdling as the curds separate from the whey. Let it sit for 5–10 minutes.
Step 3: Strain the Curds
Line a colander with cheesecloth or a clean kitchen towel. Pour the curdled milk into the colander, allowing the whey to drain. Rinse the curds with cold water to remove any excess acidity.
