Ingredients:
1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)
8 oz cream cheese, softened
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
1 sheet puff pastry, thawed (or 12 mini puff pastry shells)
1 egg (for egg wash)
Directions:
Preheat the Oven: Start by preheating your oven to 375°F (190°C). If you’re using puff pastry sheets, roll them out on a lightly floured surface. If using mini puff pastry shells, prepare them by placing them on a baking sheet.
Prepare the Filling: In a medium-sized bowl, combine the softened cream cheese, Parmesan, mozzarella, garlic powder, onion powder, salt, and pepper. Mix until smooth. Add the chopped spinach and stir until it is fully incorporated into the cheesy mixture.
Assemble the Puffs: For puff pastry sheets, cut the pastry into squares (about 3×3 inches). Place a generous spoonful of the spinach mixture in the center of each square. Fold the edges over to create a pocket or triangle, pressing down the edges to seal. If using mini puff pastry shells, fill each shell with the spinach mixture.
Egg Wash: Beat the egg in a small bowl and brush it over the tops of each puff to give them a golden, crispy finish.
Bake: Place the puffs on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until they are puffed up and golden brown. Keep an eye on them to avoid over-browning.
