Homemade Air Fryer Cottage Pie

Ingredients:
For the Filling:
- 1 pound ground beef (or lamb)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup beef broth (or stock)
For the Mashed Potatoes:
- 2 large potatoes, peeled and diced
- 1/4 cup milk (or cream)
- 2 tablespoons butter
- Salt and pepper to taste
Instructions:
Step 1: Prepare the Mashed Potatoes
- In a large pot, bring salted water to a boil. Add the diced potatoes and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy. Set aside.
Step 2: Cook the Filling
- In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.
- Stir in the diced carrots, frozen peas, tomato paste, Worcestershire sauce, thyme, salt, pepper, and beef broth. Cook for an additional 5-7 minutes until the vegetables are tender and the mixture is slightly thickened.
