Lamb and Spinach Moussaka

A Mediterranean-inspired layered casserole full of rich flavors.

Ingredients:

1 lb ground lamb
1 onion, diced
3 garlic cloves, minced
1 can diced tomatoes
1/2 tsp cinnamon
2 cups fresh spinach
2 medium eggplants, sliced
1 cup béchamel sauce (or make your own)
1/2 cup grated parmesan
Method:

Cook Lamb: Sauté lamb, onion, and garlic until browned. Add tomatoes, cinnamon, and simmer.
Prepare Eggplant: Roast eggplant slices until tender.

Layer: In a baking dish, layer eggplant, spinach, lamb mixture, and béchamel. Repeat and top with parmesan.
Bake: Cook at 375°F (190°C) for 25–30 minutes, until golden.
