🥄 Ingredients

For the Prime Rib:

  • 1 (4-5 lb) bone-in prime rib roast
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 tablespoon Dijon mustard
  • 1/4 cup prepared horseradish (preferably fresh or from a jar)

For the Horseradish Sauce:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

🍖 Instructions

1. Prepare the Prime Rib:

  1. Preheat your oven to 450°F (230°C).
  2. Pat the prime rib roast dry with paper towels to remove excess moisture.
  3. In a small bowl, mix together olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Rub the prime rib all over with the herb and spice mixture, ensuring it’s evenly coated.
  5. In a separate small bowl, combine Dijon mustard and horseradish. Spread this mixture over the seasoned prime rib, creating a flavorful coating.

2. Roast the Prime Rib:

  1. Place the prime rib on a rack in a roasting pan, bone-side down.
  2. Roast the prime rib in the preheated oven for 15 minutes at 450°F (230°C).
  3. Reduce the oven temperature to 325°F (165°C) and continue roasting for about 1.5-2 hours (depending on the size of the roast and desired doneness). For medium-rare, aim for an internal temperature of 125°F (52°C).
  4. Once the prime rib reaches the desired temperature, remove it from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute, ensuring a juicy and tender roast.

3. Make the Horseradish Sauce:

  1. In a bowl, combine sour cream, mayonnaise, horseradish, Dijon mustard, and lemon juice.
  2. Season with salt and pepper to taste, then mix until smooth and well combined.
  3. Refrigerate the sauce until ready to serve.

4. Serve and Enjoy:

  1. Slice the prime rib into thick, juicy slices.
  2. Serve with a generous dollop of horseradish sauce on the side for added flavor.
