That’s why I started trying to recreate that tasty, crunchy goodness without breaking our commitment to a low-carb diet. Introducing my homemade snack that has been a real help on those days when I crave snacks: Low Carb Cheesy Onion Ring Chips. This recipe was created because we love comforting food but also want healthier choices. It allows us to enjoy without feeling guilty. If you are following a keto diet, reducing carbs, or simply aiming to eat healthier, these cheesy snacks will make a big difference.
When it comes to combining these items, consider serving them with cold dips or salads. They go well with a tangy ranch dressing or a cool Greek yogurt dip with herbs. If you want to be a bit fancy, you could also serve them with a tasty grilled steak or a lemony grilled chicken. What are the options? Infinite!

Servings: Enough for about 4 people.
List of ingredients:
– 2 big onions, cut into thin slices.
– 1 cup of ground almonds
– 1 teaspoon of paprika
– 1/2 teaspoon of powdered garlic
– 1/4 teaspoon of cayenne pepper (if you want it spicy)
– Add salt and pepper as desired.
– 2 big eggs, whisked
– 2 cups of grated mozzarella or cheddar cheese

1. Heat your oven to 400°F (200°C) and cover a baking sheet with parchment paper.
2. Divide your onion slices into separate round pieces.
In a flat container, combine almond flour with paprika, garlic powder, cayenne pepper, salt, and pepper.
In another flat container, beat the eggs well.
Dip each onion slice in the egg, let extra drip off, and then cover it with the almond flour mix.
Put the onion slices covered in batter on the baking sheet, making sure to leave some space between each slice.
7. Sprinkle a lot of shredded cheese on top of each circle, making sure most of the cheese stays on the onions and not on the baking sheet.
Cook in the oven for 12-15 minutes until the cheese is melted and golden brown.
Let the onion ring chips cool down for a bit before taking them off the baking sheet using a spatula.
Different Types & Advice:
– If you don’t have almond flour, you can use coconut flour or another low-carb flour instead. Just remember that coconut flour absorbs more liquid, so you might need to use less of it.
– You can use different types of cheese to create various flavors; parmesan adds a sharp taste, or try using spicy pepper jack for a zesty kick.
– To add a touch of herbs to your sliced onions, mix a teaspoon of Italian seasoning with the almond flour.
– To save time on busy evenings, you can prepare your sliced onions in advance, keep them in the refrigerator on a baking sheet, and then bake them when you’re ready to eat. Discussing something that saves a lot of time!
– And don’t forget, every oven is unique, so be sure to watch your onion ring chips closely to avoid them getting too brown. They taste best when they are fresh and crunchy, right out of the oven!
