
Slow Cooker Hungarian Beef Goulash

👉Ingredients:
🚨2 lbs beef chuck, cut into 1-inch cubes
🚨2 tbsp vegetable oil
🚨2 onions, chopped
🚨3 garlic cloves, minced
🚨2 tbsp sweet paprika
🚨1 tsp caraway seeds
🚨1/4 tsp cayenne pepper (optional for heat)
🚨2 tbsp tomato paste
🚨1 cup beef broth
🚨1 can (14.5 oz) diced tomatoes
🚨2 bell peppers, sliced
🚨Salt & black pepper to taste
🚨2 tbsp flour (optional, for thickening)
🚨1/4 cup sour cream (optional, for serving)
🚨Fresh parsley, chopped (optional, for garnish)
👉Instructions:
1️⃣ Brown the beef
Heat oil in a large skillet over medium-high heat. Sear beef cubes until browned on all sides. Transfer to your slow cooker.
2️⃣ Sauté the aromatics
In the same skillet, cook onions and garlic until soft. Stir in paprika, caraway seeds, and cayenne; cook 1 minute to release flavors.
3️⃣ Deglaze & combine
Add tomato paste, stir well, then pour in beef broth, scraping up the browned bits. Pour mixture into the slow cooker with the beef.
4️⃣ Slow cook to perfection
Add diced tomatoes and bell peppers. Season with salt and pepper. Cover and cook on LOW for 7–8 hours or until beef is fork-tender.
5️⃣ (Optional) Thicken & Serve
If you like a thicker stew, stir in a slurry made from flour and water during the last 30 minutes. Serve with sour cream and parsley if desired.
