👉Ingredients:
◾️4 boneless, skinless chicken thighs
◾️1 medium onion, thinly sliced
◾️1 red bell pepper, sliced
◾️1 green bell pepper, sliced
◾️3 garlic cloves, minced
◾️1 (14.5 oz) can diced tomatoes
◾️1 cup chicken broth
◾️1 tablespoon tomato paste
◾️1 teaspoon dried oregano
◾️1 teaspoon dried basil
◾️½ teaspoon crushed red pepper flakes (optional)
◾️Salt and black pepper to taste
◾️Fresh parsley, chopped (for garnish)
👉Instructions:
✅️1. Arrange the chicken thighs in a single layer at the bottom of your slow cooker.
✅️2. Layer the sliced onion, red and green bell peppers, and minced garlic over the chicken.
✅️3. Pour in the diced tomatoes and chicken broth. Add the tomato paste and stir until well blended.
✅️4. Sprinkle in the oregano, basil, and optional red pepper flakes. Season with salt and freshly ground black pepper.
