
👉Ingredients:
◾️4 boneless, skinless chicken breasts
◾️1 red bell pepper, sliced
◾️1 green bell pepper, sliced
◾️1 yellow onion, sliced
◾️1 can (4 oz) diced green chilies
◾️1 packet fajita seasoning
(or homemade: 1 tsp chili powder, 1 tsp cumin, ½ tsp paprika, ½ tsp garlic powder, salt & pepper to taste)
◾️¼ cup lime juice (juice of about 2 limes)
◾️¼ cup chicken broth or water
◾️2 tbsp olive oil
◾️Tortillas, for serving
◾️Optional toppings: sour cream, guacamole, shredded cheese, salsa, fresh cilantro
👉Instructions:
✅️1. Place the chicken breasts at the bottom of your Crockpot.
✅️2. Add the sliced peppers and onion on top.
✅️3. Pour in the diced green chilies and sprinkle over the fajita seasoning.
✅️4. Drizzle with lime juice, chicken broth, and olive oil.
✅️5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and easy to shred.
✅️6. Remove the chicken, shred it with two forks, and return it to the Crockpot. Mix well to soak up all the flavors.
✅️7. Serve the warm, juicy chicken fajitas in tortillas and add your favorite toppings.
