
Brown Sugar Meatloaf
Ingredients:
½ cup packed brown sugar
½ cup ketchup
1½ pounds lean ground beef
¾ cup milk
2 eggs
1½ teaspoons salt
¼ teaspoon black pepper
1 small onion, finely chopped
¾ cup breadcrumbs (or crushed crackers)
½ teaspoon garlic powder (optional)
½ teaspoon dried parsley
Instructions:
1. Preheat the oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan.
2. Prepare the Glaze:
In a small bowl, mix brown sugar and ketchup.
Spread half of this mixture into the bottom of the prepared loaf pan.
3. Make the Meatloaf Mixture:
In a large bowl, combine ground beef, milk, eggs, salt, pepper, onion, breadcrumbs, garlic powder, and parsley.
Mix until well combined, but don’t overwork the meat.
4. Shape & Bake:
Press the meat mixture into the loaf pan over the brown sugar glaze.
Spread the remaining ketchup mixture on top.
5. Bake for 60-70 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
6. Rest & Serve:
Let the meatloaf rest for 5-10 minutes before slicing.
Serve with mashed potatoes, roasted veggies, or a side salad.
