Potato Puffs
Breadcrumbs for coating
Directions:
Preheat your oven to 400°F (200°C) and grease a cupcake pan. Start by boiling the potatoes in salted water until they’re tender, then drain and mash them up. In a large bowl, mix the mashed potatoes with the melted butter, milk, cheese, garlic powder, onion powder, salt, and pepper. Add the eggs and mix everything until it’s well combined. Spoon the mixture into the cupcake pan, pressing it down gently. Sprinkle some breadcrumbs on top of each portion. Bake them for about 20-25 minutes or until they turn golden brown. Let them cool a bit before taking them out of the pan and serving. Enjoy!
