3 cups shredded chicken
3 celery stalks, chopped
⅔ cup pesto
¼ cup mayo
1/3 cup parmesan cheese, shredded
¼ of red onion, sliced
Salt and pepper to taste
Cherry tomatoes, pine nuts, greens for serving

Preparation
1. In a large bowl, mix together all ingredients until fully combined.
2. Cover and chill for 1-2 hours.
3. Garnish with tomatoes, pine nuts, and additional parmesan cheese if desired. Serve over greens, on a sandwich, or with crackers.
