Ingredients:
3-4 chicken eggs
Water (for boiling)
2 zucchinis, sliced
Olive oil (for cooking)
Salt, to taste
300 grams tomatoes, chopped
Parsley, chopped (for garnish)
For the Sauce:
2 tablespoons yogurt
15 grams mustard
20 grams mayonnaise
1 clove garlic, minced
Directions:
Boil the eggs: Place the eggs in a pot of water and bring to a boil. Cook for 10 minutes until hard-boiled. Remove from heat, cool under cold running water, peel, and set aside.
Cook the zucchini: Slice the zucchinis and heat a drizzle of olive oil in a skillet over medium heat. Cook the zucchini slices for 3-5 minutes on each side until tender and lightly browned. Season with salt. Let it cook for an additional 10 minutes to soften completely.
Prepare the tomatoes: Chop the tomatoes and place them in a mixing bowl.
