Ingredients
For the Yuca:
- 2 lbs fresh or frozen yuca (cassava), peeled and cut into chunks
- 1 teaspoon salt
- Water (for boiling)
For the Mojo Sauce:
- ¼ cup olive oil
- 5 cloves garlic, minced or finely chopped
- ½ teaspoon salt
- ½ teaspoon ground cumin
- ¼ teaspoon black pepper
- ½ teaspoon dried oregano
- ¼ cup sour orange juice (or a mix of fresh orange and lime juice)
- 2 tablespoons chopped fresh parsley (for garnish)

Instructions
1. Boil the Yuca
- If using fresh yuca, cut it into large chunks and remove the tough fibrous core. If using frozen yuca, thaw it slightly for easier cutting.
- Place the yuca pieces in a large pot of salted water and bring to a boil. Cook for 25-30 minutes, or until fork-tender.
- Drain and set aside on a serving plate.
