Tuna and Potato Casserole with Mozzarella

Step 1: Prepare the Onion
Heat a small amount of oil in a large pan over medium heat.
Cut the onion into half rings and add it to the pan.
Fry the onion until softened and golden brown, about 5-7 minutes. Stir occasionally to prevent burning and ensure even cooking.
Step 2: Cook the Potatoes
Peel and cut the potatoes into cubes.
Place the potatoes in a pot and cover them with cold water.
Add 1 tsp salt to the water, and bring it to a boil over medium-high heat.
Once the water is boiling, reduce the heat to low and simmer the potatoes for about 15-20 minutes, or until they are tender when pierced with a fork.
Once done, drain the potatoes, reserving about 1 ladle of the potato broth for later use.
Step 3: Prepare the Tuna Mixture
Drain the brine from the canned tuna and add the tuna to the pan with the cooked onions.
Add 2 tbsp tomato paste and 1 ladle of the reserved potato broth to the pan. Stir everything together and cook for about 2-3 minutes on low heat to allow the flavors to meld together.
Season with salt and black pepper to taste, adjusting the seasoning as needed.
Step 4: Mash the Potatoes
After the potatoes are drained, add the butter to the pot with the potatoes while they are still hot.
Mash the potatoes with a potato masher until smooth and creamy.
Gradually add the 180 ml hot milk and continue to mash and mix until the potatoes are smooth and fluffy.
Season with salt and black pepper to taste.
Step 5: Assemble the Casserole
Preheat your oven to 190°C (375°F).
In a greased baking dish, spread a layer of the mashed potatoes on the bottom.
Add a layer of the tuna and onion mixture over the potatoes.
Add another layer of mashed potatoes on top of the tuna mixture.
Add a final layer of the tuna and onion mixture.
Sprinkle grated mozzarella evenly on top of the casserole to create a cheesy, golden crust.
Step 6: Bake the Casserole
Place the assembled casserole in the preheated oven and bake for 10-15 minutes, or until the mozzarella is melted and golden brown on top.
Once baked, remove from the oven and let the casserole cool slightly before serving.
