Tried this other day and now my hubby won’t stop asking for it
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheese is melted and smooth.
In a separate bowl, mix together the almond flour, baking powder, and garlic powder.
Add the dry ingredients to the melted cheese mixture, along with the eggs. Stir until a dough forms.
Divide the dough into 6 equal parts. Roll each part into a ball and then shape into a bagel by poking a hole in the center and stretching it out slightly.
Place the bagels on the prepared baking sheet. Sprinkle the tops with Parmesan cheese and Italian herbs, if using.
Bake for 12-15 minutes, or until the bagels are golden brown.
Allow to cool slightly before serving.
Variations & Tips
For a spicy kick, add a pinch of red pepper flakes to the dough. You can also experiment with different cheeses; try cheddar for a different flavor profile. If you’re not strictly keto, consider adding a tablespoon of honey to the dough for a touch of sweetness. For a more traditional bagel topping, sprinkle some sesame seeds or poppy seeds on top before baking.
