Ingredients:

3 ripe bananas, mashed
1 cup all-purpose flour
2 tbsp granulated sugar
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt

Instructions:

1. In a bowl, mash the bananas until smooth.
2. In another bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
3. Add the dry ingredients to the mashed banana along with the milk and vanilla. Stir just until combined – do not overmix.
4. Let the batter rest for 5 minutes while you heat 1/4 inch of oil in a skillet over medium heat.
5. Scoop spoonfuls of batter into the hot oil, flattening them slightly. Fry for 2-3 minutes per side until golden brown.
6. Drain fritters on a paper towel-lined plate and dust with powdered sugar before serving if desired.
