Potatoes stuffed with meat and cheese
Potatoes stuffed with minced meat and cheese are a tasty and comforting dish, ideal for a meal with family or friends. Ingredients:
5 medium-sized potatoes
400 g minced meat (beef, veal or mixture)
Salt and pepper to taste
1 bouquet of fresh chopped parsley
1 egg
15 g (2 tablespoons) of breadcrumbs
2 tablespoons of extra virgin olive oil
200 g cheese (mozzarella, emmental or cheddar)

1. Preparation of potatoes
Start by washing the potatoes thoroughly under running water to remove any trace of the soil. Place them in a large saucepan filled with cold water and bring to the boil. Leave to cook for about 30 minutes until they are tender. To check the cooking, prick them with the tip of a knife: it should sink without resistance. Once cooked, drain them and let them cool before handling them.
