1/2 cup grated parmesan cheese
1/4 cup crumbled gorgonzola cheese
1 teaspoon dried oregano

Directions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
Add the eggs and olive oil to the dry ingredients and mix until a dough forms.
Place the dough between two sheets of parchment paper and roll it out into a thin, even circle.
Transfer the rolled-out dough onto a baking sheet and remove the top layer of parchment paper.
Bake the crust for 10-12 minutes, or until it becomes golden brown.
Remove the crust from the oven and sprinkle the mozzarella, cheddar, parmesan, and gorgonzola cheeses evenly over the top.
Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Sprinkle dried oregano over the pizza and garnish with fresh oregano leaves before serving.
Variations & Tips
For a different flavor profile, try adding sliced mushrooms, bell peppers, or olives before baking the pizza. If you have picky eaters in the family, you can customize each section of the pizza with their favorite toppings. For a spicier kick, sprinkle some red pepper flakes over the cheese before baking. If you’re not a fan of gorgonzola, feel free to substitute it with another cheese like feta or goat cheese.
