  • 2 pounds of fresh, ripe tomatoes (about 9 medium-sized)
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • A handful of fresh basil leaves, chopped (or 1 teaspoon dried basil)
  • Salt and pepper to taste

Preparation Steps:

1. Prepare the Tomatoes:

Start by scoring a small “x” at the bottom of each tomato. Then, blanch them in boiling water for about 30 seconds. Once done, remove the tomatoes and immediately place them in cold water to stop the cooking process. Peel off the skins, remove the seeds, and roughly chop the tomatoes.

2. Cook the Base:

In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook them until soft and translucent, which should take about 5 minutes. Stir in the minced garlic and cook for another minute, until fragrant.

3. Simmer the Sauce:

Add the chopped tomatoes to the pot, and stir in the fresh basil (or dried basil), salt, pepper, and a pinch of sugar if you’d like to balance the acidity of the tomatoes. Reduce the heat to low and let the sauce simmer for about 30 minutes, stirring occasionally.
