Homemade Summer Sausage 🌭
This Homemade Summer Sausage is packed with rich, savory flavors and makes a great addition to any charcuterie board or as a delicious snack.
**Ingredients:**
– 2 lbs ground beef (80/20 blend)
– 2 teaspoons curing salt (Prague Powder #1 or pink salt)
– 1/2 teaspoon ground mustard
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon black pepper
– 1 teaspoon liquid smoke
– 1/2 teaspoon ground coriander
– 1/2 teaspoon paprika
– 1/4 teaspoon crushed red pepper flakes (optional)
– 1/2 cup water
– 1/4 cup powdered milk
**Instructions:**
1. **Mix the Ingredients:**
– In a large bowl, combine the ground beef, curing salt, ground mustard, garlic powder, onion powder, black pepper, liquid smoke, ground coriander, paprika, and crushed red pepper flakes. Mix thoroughly.
2. **Add Water and Powdered Milk:**
– Add the water and powdered milk to the mixture. Mix until well combined and the mixture is sticky.
