1. Peel and dice potatoes, cook in boiling salted water for about 20 minutes. Drain and allow to steam off.
2. Heat milk and butter, then mash into the potatoes to create a fine puree. Season with salt and nutmeg.
3. For the meatballs, place minced meat in a bowl. Dice and soak the bread roll in milk. Finely dice the onion and sauté in 1 tablespoon of butter until translucent.
4. Mix the sautéed onion, soaked bread, mustard, and tomato paste into the minced meat.
5. Finely chop parsley and add it along with the egg to the meat mixture. Season with salt and pepper, then knead and form into 12 meatballs.
6. In the remaining butter, fry the meatballs for about 12 minutes until crispy brown. Keep warm.
7. For the sauce, sprinkle flour into the frying fat, brown it lightly while stirring. Add vegetable broth and let it simmer down.
8. Season sauce with lemon juice, salt, and pepper.
9. Serve the meatballs with mashed potatoes and sauce.
