200 ml water
25 grams sugar
1/4 teaspoon salt
50 grams butter
150 grams wheat flour
2 eggs
1 teaspoon vanilla extract
Oil for frying
Chocolate sauce for serving
Directions:

In a medium saucepan, combine 200 ml water, 25 grams sugar, 1/4 teaspoon salt, and 50 grams butter. Heat over medium heat and stir until the butter melts and the mixture comes to a boil.
Reduce the heat to low and add 150 grams wheat flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.
Remove the saucepan from the heat and let the dough cool for about 5 minutes.
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough should be smooth and glossy.
Add 1 teaspoon vanilla extract to the dough and mix well.
Transfer the dough to a piping bag fitted with a large star tip.
Heat oil in a large pot or deep fryer to 350°F (175°C).
Pipe the dough directly into the hot oil, cutting it into desired lengths with scissors. Fry the churros in batches, turning them occasionally to ensure they cook evenly on all sides.
Fry until the churros are golden brown and cooked through, about 2-3 minutes per side.
Remove the churros from the oil using a slotted spoon and drain them on paper towels.
