Feta & Herb Stuffed Flatbreads
These soft and fluffy flatbreads are stuffed with a deliciously savory mix of feta cheese and fresh herbs, then cooked until golden brown with a crispy exterior. Brushed with a flavorful garlic herb oil, they make the perfect side dish or snack. Serve them warm with a drizzle of honey, a dip in tzatziki, or alongside your favorite Mediterranean meal!

Ingredients:
For the Dough:
2 cups all-purpose flour
1 tsp salt
1 tsp sugar
1 tsp instant yeast
¾ cup warm water
2 tbsp olive oil
For the Filling:
1 cup feta cheese, crumbled
¼ cup fresh parsley, chopped
1 tbsp fresh dill, chopped (optional)
1 tsp garlic powder
½ tsp black pepper
For the Herb Oil:
3 tbsp olive oil or melted butter
1 garlic clove, minced
1 tbsp fresh parsley, chopped
½ tsp dried oregano
Instructions:
Prepare the Dough:
In a mixing bowl, combine flour, salt, sugar, and yeast. Add warm water and olive oil.
Knead for about 5-7 minutes until a smooth dough forms.
Cover and let it rest for about an hour or until doubled in size.
Make the Filling:
In a bowl, mix crumbled feta, chopped parsley, dill, garlic powder, and black pepper.
Assemble the Flatbreads:
Once the dough has risen, divide it into 4 equal pieces.
Roll out each piece into a small circle.
Place a generous amount of the feta filling in the center, then fold and pinch the edges together to seal.
Gently roll out again into a thick disc.
Cook the Flatbreads:
Heat a skillet or pan over medium heat.
Cook each flatbread for about 3-4 minutes per side, until golden brown and slightly charred in spots.
Prepare the Herb Oil:
Mix olive oil (or melted butter) with minced garlic, parsley, and oregano.
Finish & Serve:
Brush the warm flatbreads with the herb oil mixture.
Serve warm and enjoy!
