1/4 cup all-purpose flour
1/4 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons butter
2 tablespoons vegetable oil
Directions
1. In a large bowl, combine the mashed potatoes, shredded cheddar cheese, crumbled bacon, and chopped green onions.
2. Stir in the egg, all-purpose flour, garlic powder, salt, and pepper until well combined.
3. Divide the mixture into small portions and shape them into patties about 1/2 inch thick.
4. In a large skillet, heat the butter and vegetable oil over medium heat until the butter is melted and the oil is hot.
5. Carefully place the potato cakes in the skillet, frying them in batches if necessary. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
6. Remove the potato cakes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
