Step 1: Prepare the Mixture
In a large mixing bowl, combine the shredded chicken , chopped onion , bell pepper (if using), breadcrumbs , Parmesan cheese , beaten egg , garlic , paprika , parsley , salt , pepper , and red pepper flakes (if using).
Mix everything together until well combined. The mixture should hold together when squeezed; if it’s too dry, add another tablespoon of beaten egg.
Step 2: Shape the Fritters
Scoop about 2 tablespoons of the mixture and shape it into a small patty, about 1/2-inch thick. Repeat with the remaining mixture—you should get about 8–10 fritters .
. Optional: Lightly coat the patties in additional breadcrumbs or flour for extra crispiness.
Step 3: Set Up the Breading Station
Set up three shallow bowls for breading:
Bowl 1: Flour
Bowl 2: Beaten egg (egg wash)
Bowl 3: Panko breadcrumbs (mix in garlic powder or Italian seasoning if desired)
Coat each fritter first in the flour , shaking off excess. Then dip it into the egg wash , and finally coat it thoroughly in the panko breadcrumbs , pressing gently to adhere.
Step 4: Fry the Fritters
Heat about 1/2 inch of vegetable oil in a large skillet over medium heat to 350°F (175°C) .
Fry the fritters in batches for 3–4 minutes per side , or until golden brown and crispy. Avoid overcrowding the pan to ensure even cooking.
Remove the fritters with a slotted spoon and drain them on paper towels to absorb excess oil.
Step 5: Serve and Enjoy
Serve the fritters warm with your favorite dipping sauce, such as ranch, honey mustard, or hot sauce.
