2-3 medium potatoes (e.g., Yukon Gold or Russet), thinly sliced
1 cup shredded cheese (e.g., Gruyère, cheddar, mozzarella, or a blend)
1 small onion or shallot, thinly sliced (optional)
2 cloves garlic, minced (optional)
2 tablespoons olive oil
Salt and pepper to taste

Instructions:
