1. Preheat oven to 400°F (200°C).
2. In a skillet, heat olive oil over medium heat. Sauté onions with a pinch of salt for 15–20 minutes until deeply caramelized; stir in balsamic vinegar during the last 5 minutes.
3. Roll out the puff pastry on a parchment-lined baking sheet and score a 1-inch border around the edges.
4. Spread the caramelized onions evenly over the center of the pastry and sprinkle with goat cheese.
5. Bake for 15–20 minutes until golden and crisp. Garnish with fresh thyme before serving.
