2 medium zucchini , thinly sliced lengthwise (use a mandoline slicer for even slices)
1 tbsp olive oil

1/2 cup marinara sauce (homemade or store-bought)
1 cup shredded mozzarella cheese

Sliced pepperoni

Fresh basil leaves
Crumbled feta or goat cheese

Step-by-Step Instructions
Step 1: Prepare the Zucchini
Thinly slice the zucchini lengthwise into strips about 1/8-inch thick. Pat them dry with a paper towel to remove excess moisture, which helps prevent sogginess.
Brush both sides of the zucchini slices lightly with olive oil and season with salt and pepper.
Step 2: Cook the Zucchini
Heat a large skillet over medium heat. Arrange the zucchini slices in a single layer in the skillet and cook for 1–2 minutes per side , until they soften slightly and develop light grill marks. Remove and set aside.
Step 3: Assemble the “Crust”
Lay the cooked zucchini slices on a plate or baking sheet, overlapping them slightly to form a rectangular or circular “crust.”
Spread a thin layer of marinara sauce evenly over the zucchini base.
Step 4: Add Cheese and Toppings
Sprinkle shredded mozzarella cheese over the marinara sauce. Add your favorite toppings—pepperoni, diced veggies, or fresh herbs work beautifully.
