1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
2 carrots, chopped
2 stalks celery, chopped
1 sweet potato, peeled and chopped
1 can diced tomatoes
4 cups vegetable broth
1 can chickpeas, drained and rinsed
1 cup green beans, trimmed and chopped
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions

Sauté the Aromatics
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté for 2-3 minutes, until softened and fragrant.

Stir in the chopped carrots, celery, and sweet potato. Sauté for about 5 minutes, until the vegetables begin to soften
