Vegan Lemon Dill Hummus Recipe

Ingredients

1 (15-ounce) can of chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons extra-virgin olive oil (plus extra for drizzling)

Juice of 1 large lemon (about 3 tablespoons)

Zest of 1 lemon

2 cloves garlic, peeled

1/4 teaspoon ground cumin

1/2 teaspoon sea salt (adjust to taste)

2-3 tablespoons fresh dill, chopped (plus extra for garnish)

2-4 tablespoons cold water (to adjust consistency)

Optional: Pine nuts for garnish, toasted

Instructions

Prepare the Ingredients:

Drain and rinse the chickpeas. For an ultra-smooth hummus, peel the chickpeas by gently rubbing them between your fingers or rolling them in a clean kitchen towel to remove the skins.

Chop the fresh dill and zest the lemon.
