INGREDIENTS:
4 catfish fillets
1 cup fresh spinach, chopped
1 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
1/2 cup cooked crab meat, flaked
1/4 cup green onions, chopped
2 cloves garlic, minced
1 teaspoon lemon juice
Salt and pepper to taste
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)

STEP 1: PREPARE THE FILLING
– Sauté Spinach: In a skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute until fragrant. Add the chopped spinach and sauté until wilted. Remove from heat and let cool slightly.
– Mix Filling: In a bowl, combine the cream cheese, mozzarella cheese, crab meat, sautéed spinach, green onions, lemon juice, salt, pepper, paprika, and cayenne pepper (if using). Mix until well combined.
