Make the Dough:
In a small bowl, combine warm milk, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
In a large bowl, combine melted butter, egg, flour, and salt. Add the yeast mixture and stir until a soft dough forms.
Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare the Strawberry Filling:
In a small saucepan, combine chopped strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly, until thickened (about 5-7 minutes).
Let the filling cool completely. Once cooled, mash the mixture slightly to make it easier to spread.
Assemble the Rolls:
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
Roll out the risen dough into a rectangle (about 12×18 inches) on a floured surface.
Spread the softened butter over the dough, then evenly spread the cooled strawberry filling on top, leaving a small border around the edges.
Roll the dough tightly from the long side, creating a log. Slice the log into 12 equal pieces.
Place the rolls in the prepared baking dish, cover with a towel, and let them rise for another 20-30 minutes.
Bake the Rolls:
Bake the rolls in the preheated oven for 20-25 minutes, or until golden brown.
Remove from the oven and let them cool slightly.
Make the Cream Cheese Frosting:
In a medium bowl, beat together the softened cream cheese, butter, powdered sugar, vanilla extract, and heavy cream until smooth and fluffy.
Frost & Serve:
Spread the cream cheese frosting generously over the warm rolls.
Garnish with a few extra chopped strawberries if desired.
Enjoy warm or at room temperature!
Tips:
For extra flavor, add a teaspoon of cinnamon to the strawberry filling.
Ensure the strawberry filling is fully cooled before spreading to prevent soggy dough.
Fresh strawberries are recommended for a brighter flavor, but frozen strawberries work well too (just make sure they are thawed and drained slightly).
