Step 1: Preheat & Prepare
1. Preheat oven to 375°F (190°C).
2. Grease or line a 12 cup muffin tin with paper liners.
Step 2: Mix Dry Ingredients
1. In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and thyme.
Step 3: Mix Wet Ingredients
1. In a separate bowl, whisk together eggs, milk, olive oil, and Dijon mustard until well combined.
Step 4: Combine Wet & Dry Ingredients
1. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.
2. Fold in chopped celery, grated cheese, and green onions.
Step 5: Bake
1. Spoon the batter evenly into the prepared muffin cups, filling about ¾ full.
2. Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Step 6: Cool & Serve
1. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
2. Serve warm with butter or enjoy at room temperature.
