Savory Baked Potato Casserole with Cheese and Vegetables

Ingredients

For the Base:

  • 3 medium potatoes, peeled and grated
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 2 tbsp olive oil
  • 2-3 tbsp olive oil (for baking)
  • 2 eggs
  • 1 cup (200ml) milk
  • 80g (⅔ cup) flour
  • Salt, to taste
  • Ground black pepper, to taste
  • 2 tbsp chopped green onions

For the Topping:

  • 2 tomatoes, sliced
  • 100g (⅔ cup) cheese, grated (cheddar, mozzarella, or your favorite)
  • Salt, to taste
  • Fresh parsley, for garnish

Directions

Step 1: Prepare the Potatoes

  1. Grate the potatoes and place them in a bowl.
  2. Pour water over the potatoes and let them sit for 10 minutes to remove excess starch.
  3. Drain the water completely and squeeze out excess moisture using a clean kitchen towel.

Step 2: Prepare the Vegetable Mixture

  1. Heat 2 tbsp olive oil in a pan over medium heat.
  2. Add chopped onions and grated carrots and sauté until softened (about 3-4 minutes).
  3. Remove from heat and set aside.

Step 3: Prepare the Batter

  1. In a mixing bowl, whisk together eggs, milk, flour, salt, and black pepper until smooth.
  2. Stir in the grated potatoes, sautéed vegetables, and chopped green onions. Mix well.

Step 4: Bake the Casserole

  1. Preheat the oven to 200°C (400°F).
  2. Grease a baking dish with 2-3 tbsp olive oil and pour in the potato mixture, spreading it evenly.
  3. Bake for 30 minutes until the top is set and lightly golden.

Step 5: Add the Toppings & Bake Again

  1. Remove the dish from the oven and layer sliced tomatoes on top.
  2. Sprinkle grated cheese and a pinch of salt over the tomatoes.
  3. Return to the oven and bake for another 10 minutes, or until the cheese melts and turns golden.

Step 6: Garnish & Serve

  1. Sprinkle fresh parsley on top before serving.
  2. Slice and enjoy warm!
